What to expect
Often soft on the palate with a lively finish. Wheat contributes body and texture. Depending on the yeast and recipe, a wheat beer may have citrus, spice or fruity notes.
How wheat beer is made
Wheat beer uses wheat alongside other grains, often barley malt. The brewer mashes the grains, boils the wort and chooses yeast to suit the desired version. A German-style weissbier yeast can bring banana and clove notes; an American wheat beer may use a cleaner yeast. Wheat can add a soft texture and a cloudy look, though neither is guaranteed in every version.
What makes wheat beer different
The grain bill includes wheat, while the yeast choice decides much of the flavour. It can be lightly hopped and gentle beside an IPA. Wheat beer is not automatically sour: a sour wheat beer is one possibility, not the whole family. Ask whether the taproom’s version is German-style, American-style or something else.
What to ask for
Try one if you want something bright without a strongly bitter hop finish.
